Tea Ice Cream
(for making 2 lbs. of tea ice cream)
Ingredients:

Dry tea (with good flavour) - 2 oz |
 |
Refined sugar - 1 lb |
 |
Arrowroot or cornflour - 1 oz |
 |
Fresh milk - 2 lbs |
 |
Water - 10 oz |
|
 |
Method:
Heat water and remove quickly from fire when boiling. Rinse out teapot with hot water and put in tealeaves. Pour boiling water into teapot. Infuse for 8 to10 minutes. Strain off infusion and keep aside.
Now, boil milk. Next, blend sugar with arrowroot (or cornflour) thoroughly and add lo boiled milk. Let mixture simmer for about10 minutes stirring continuously to avoid lumps. Remove from fire; add tea infusion, stir and freeze. |

Honey Mint Iced Tea Recipe
This Honey Mint Iced Tea recipe makes 4 servings.
Ingredients:

4 cups boiling water |
 |
1/2 cup fresh mint leaves |
 |
1/4 cup honey |
 |
2 teaspoon green or black tea |
|
 |
Preparation
In large heatproof pitcher, pour boiling water over mint and tealeaves. Whisk in honey. Let steep 5 minutes. Remove tealeaves; cool. Refrigerate until ready to serve. To serve, pour over ice. |

Honey Raspberry Iced Tea Recipe
This Honey Raspberry Iced Tea recipe makes 4 servings.
Ingredients:

2 cups cranberry-raspberry juice |
 |
2 cups freshly brewed tea |
 |
1/4 cup honey |

 |
Preparation
In large, heatproof pitcher, whisk together all ingredients until thoroughly combined and honey is dissolved. Chill until ready to serve. To serve, pour over ice. |

Apple Spiced Iced Tea Recipe
Ingredients:

 |
3 cups apple juice |
 |
3 cups boiling water |
 |
6 black tea bags |
 |
1/4 teaspoon ground allspice |
 |
1/3 cup honey |

 |
Preparation
Bring water to a boil and add teabags. Remove from heat and let steep for 15 minutes. Remove teabags; stir in allspice, honey and apple juice. Simmer over low heat for 1 minute. Chill before serving over ice. |

Hot Tea Punch
Ingredients:

5 bags of your favorite tea from our Traditional Teas Collection |
 |
6 cups water |
 |
3/4 cup sugar |
 |
2 cinnamon sticks |
 |
8 whole cloves |
 |
1 1/2 cups orange juice |
 |
1/3 cup fresh lemon juice |
|
 |
Method:
Bring first 4 ingredients to boil in heavy large saucepan over high heat, stirring until sugar dissolves. Boil 6 minutes. Remove from heat. Add tea bags. Cover and let steep 10 minutes. Discard tea bags. Add orange and lemon juices to punch. (Can be prepared 1 day ahead. Cover and refrigerate. Re-warm before continuing.) Using slotted spoon, remove whole spices. Serve hot. |

Indian Chai Tea
Ingredients:

3 teabags black tea |
 |
4 cups water |
 |
1 3 inch cinnamon stick |
 |
1 inch piece of ginger root cut into 4 slices |
 |
1/2 tsp (2 ml) cardamom seeds |
 |
1/2 tsp (2 ml) black peppercorns |
 |
1/2 tsp (2 ml) whole cloves |
 |
1 tsp (5 ml) whole coriander seeds |
 |
1 cup (225 ml) milk |
 |
Honey or other sweetener to taste |

 |
Methods:
Bring water to boil in a saucepan. Add spices, cover, and simmer 20 minutes. Add teabags and steep 10 minutes. Add milk and heat to drinking temperature-do not boil. Strain mixture through a cheesecloth or cotton dish towel. Serve with honey or other sweetener to taste. |

Black Saffron Tea
Ingredients:

4 teaspoon Green tea |
 |
6 Green cardamoms |
 |
4 tsp Sugar |
 |
1/2 tsp Saffron threads |
 |
4 cups Water |
 |
4 bags Golden Green Tea Black |

 |
Methods:
Add the cardamom, sugar and saffron to the water and bring to a boil. Simmer until reduced by half. Bring to boil again, add tealeaves and steep for 8 minutes. Strain out tea and spices. Serve hot. |

Lemon Spice Tea Recipe
This Lemon Spice Tea recipe makes 2 servings.
Ingredients:

2 cups warm water |
 |
2 lemon slices |
 |
2 teaspoon tealeaves |
 |
2 tablespoons honey |
 |
2-inch long cinnamon stick |
 |
Lemon slices for garnish |

 |
Preparation:
Break cinnamon stick into smaller pieces. Using a 2-cup measuring cup, combine water, honey, lemon slices and cinnamon. Microwave on high power for 4 minutes or until steaming hot. Add tealeaves and steep for four minutes. Remove tealeaves, lemon slices and cinnamon stick pieces. Pour into 2 mugs. Garnish with more lemon if desired. |

Ingredients:

4 cinnamon sticks, 3 inches long |
 |
4 cups freshly brewed tea |
 |
1/4 cup honey |
 |
4 lemon or orange slices, optional |
 |
4 whole cloves |

Preparation:
Combine tea, honey, cinnamon sticks and cloves in large saucepan; simmer 5 minutes. Serve hot. Garnish with lemon slices, if desired. |

Cinnamon Spiced Tea Recipe

Ingredients:

1/4 cup black tea |

4 cups boiling water |
 |
Ground cinnamon |

1/2 cup sweetened condensed milk |

Preparation:
Allow tea to steep for five minutes in boiling water. Strain into 4 cups. Add dash of cinnamon and 2 tablespoons condensed milk to each serving. Stir and serve. |

1/2 teaspoon lemon zest, finely grated |

4 cups boiling water |

1/2 cup sugar |

2 tablespoons lemon juice |

1 teaspoon almond extract |
 |
1/4 teaspoon vanilla |

Preparation:
Steep tea and lemon zest in boiling water for about 5 minutes. Stir in remaining ingredients, then strain into cups or mugs and serve hot. |

Sugar to taste |

Preparation:
Add water and spices to sauce pan and bring to boil. Place tea leaves into serving or storage container. Pour water over tealeaves and steep for 5 minutes. Stir, and then add sugar to taste. Add orange juice and lemon juice and stir again. Makes 12 cups |
